The Blend
Bitters are the least fashionable thing in any cabinet and the one worth keeping. This bottle gathers gentian and kutki, two of the bitterest roots in the world, alongside artichoke leaf, bitter orange peel, dandelion root, andrographis and tulsi.
It is genuinely bitter — that is the entire point, and no amount of honey will disguise it. Ten minutes before a meal, a small measure on the tongue, and the palate does what palates have always done with bitterness.
Traditionally Associated With
Bitter herbs have a long place in European and Asian digestive traditions, historically associated with appetite, fullness and sluggish digestion; bitter aperitifs and bitter tonics are the surviving household versions of that practice. These are traditional associations, not a claim that bitterness treats any condition.

Botanical Wisdom
Gentian, named for a king
Gentiana lutea takes its name from Gentius, the Illyrian king said to have recognised its bitterness in the second century BC. It grows slowly in alpine meadows, is protected across much of Europe, and is cultivated for the trade precisely because wild stands cannot be picked. The root is so bitter that a single gram can be tasted in a litre of water — a reminder that in herbalism, flavour has always been information.
A Note from the Herbalist
“Bitters are the one thing I ask people to try before they decide they do not like them. Ten minutes before dinner, and the whole evening behaves differently. It also stops you eating quite so fast, which is not the point but is not nothing.”
